    Baked Zucchini Chips

    2 medium zucchini, sliced thin
    ½ cup finely crushed corn cereal (Nature’s Path Organic)
    1/8 tsp. black pepper
    1/8 tsp. onion powder
    1/8 tsp. garlic powder
    4 tbs. grated parmesan cheese *
    2 egg whites

    Preheat oven to 475 degrees. In one small bowl, stir together
    the cereal crumbs, spices, and parmesan cheese. Place the
    egg whites in a separate bowl. Dip zucchini slices into the egg
    whites, then coat with the cereal mixture. Place on a greased
    baking sheet. Bake for 5 minutes then turn over and bake for 5
    minutes more.

    Bacon Wrapped BBQ Shrimp

    One pound large shrimp, peeled and deveined
    One pound bacon
    barbeque sauce

    Preheat oven to 450 degrees. Line a pan with foil, and place a
    baking rack in pan. Partially cook the bacon, but remove from
    pan before crispy. Wrap each piece of shrimp with 1/2 piece of
    bacon, and secure with a toothpick. Dip each piece of shrimp
    into barbeque sauce and place the shrimp on the rack, (if you
    do not have a baking rack, shrimp can be placed directly on the
    foil) Bake for about 10 minutes, or until bacon has come to a
    crisp.


    Cocktail Meatballs

    1 pound ground beef
    1 egg *
    2 tbs. water
    ½ cup corn cereal (Nature’s Path)
    3 tbs. minced onion
    8 oz. cranberry sauce
    ¾ cup chili sauce (see recipe)
    1 tbs. brown sugar
    1 ½ tsp. lemon juice

    Preheat oven to 350 degrees. In a large bowl, mix together the
    ground beef, egg, water, bread crumbs, and minced onion. Roll
    into small meatballs. Bake for 20 to 25 minutes, turning once.
    In a slow cooker or large saucepan over low heat, blend the
    cranberry sauce, chili sauce, brown sugar, and lemon juice.
    Add meatballs, and simmer for 1 hour before serving.

    Guacamole

    3 avocados – peeled, pitted, and mashed
    2 roma tomatoes, diced
    1 lime, juiced
    ½ cup diced onion
    3 tbs. freshly chopped cilantro
    1 tsp. salt
    1 tsp. minced garlic
    1 pinch cayenne pepper

    In a medium bowl, mash together the avocados, lime juice, and
    salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in pepper.
    Refrigerate for one hour for best flavor, and eat within a couple
    of hours of preparation.

    Potato Skins

    6 potatoes
    1 cup olive oil
    8 ounces shredded cheese *
    1/8 cup bacon bits
    Chives, diced
    Garlic salt

    Preheat oven to 375 degrees. Lightly grease a 9 X 13-inch
    baking pan. Pierce potatoes with a fork. Bake potatoes. Cut the
    potatoes in half vertically. Scoop the inside out of the potatoes,
    and ¼-inch of the potato shell remains. Brush with olive oil and
    sprinkle with garlic salt and bake at 400 degrees for 45 minutes.
    Fill the potato shells with cheese and bacon. Arrange them in
    the prepared baking pan. Bake for an additional 7 minutes, or
    until the cheese is melted. Serve with chives.

    Salsa

    This is a quick and easy salsa recipe. Don’t be fooled by the
    canned ingredients, it tastes like the ingredients were freshly
    picked!

    2 (14.5 oz) cans stewed tomatoes
    ½ onion, finely chopped
    ¼ cup canned sliced green chiles
    3 tbs. chopped fresh cilantro
    1 tsp. minced garlic
    1 tsp. salt
    ½ lime, juiced

    Place all of the ingredients in a blender, and blend on low to
    desired consistency.
